Hello!
I feel like the Cogg system of woodworking was pretty fleshed out, but coming from there I don't know how to make anything productive from split logs.
Questions in game have led to no fruition... halp!

Woodworking
Re: Woodworking
According to Cogg's website, wooden blocks are made from split logs. The recipe list for woodworking (recipe list woodwork) doesn't appear to have blocks as a craftable thing. So if you've gotten to that point with a log and you still can't make them, but have the recipe to do so, I would suggest BUGging it.
That being said, I have seen some legacy characters making totems, which require the same block, so it is my assumption that they have access to a skill or ability which gives them the recipe. If you're playing on a new character without any skills or abilities from Old Clok, you'll find a number of things that are not accessible - this is likely one of them.

A shadowy wolf with luminous blue eyes emerges from the edge of the redwood grove, its stance and gait non-aggressive. Maintaining several yards distance, it sits. Several others begin to emerge from various points in the foliage around you, causing you to realize you have been surrounded. The first wolf stares at Vighon for many long moments, unmoving and unblinking, as the surrounding wolves remain still. Then the first wolf stands, turns, and heads back into the redwood grove. The surrounding wolves disappear back into the surroundings.
Re: Woodworking
Squeak is correct. If you already have the woodworking skill by virtue of being a legacy character, there's a number of things that CAN be crafted. But the capacity to actually train woodworking skill up isn't functional, so it's not something new characters can do yet. Most of the crafts are in this state right now, unfortunately! Not a permanent thing tho, just a matter of waiting until Rias has gotten around to updating the different craft skills.
