I was curious. When a sorcerer possesses a body, will that body carry over the sorcerer's non combat focused abilities such as Herbalism and First Aid? Also, if this new body fells a tree, will the sorcerer gain skill ranks in Logging or would the skills be connected to the body used?

Skill knowledge is not transferred in either direction. The possessed body depends on the skills and abilities it knew in life, with some restrictions. The possessor is able to influence the host to do specific things, and is aware of things from the host's perspective, but it's not quite the same as controlling one's own body. As an anology, think of it as having radio communications with the host, where the host is completely and totally compliant, but you're not the one actually performing the act - you're just telling the host what to do. So if you're a master swordsman and you possess a novice, you can communicate to the novice's body that you want it to attack with its sword, but it's going to do so only as well as the host body knows how.

Are there NPCs who have logging or blacksmithing ranks, if so are they hinted about in while in game?

Sounds like someone wants to cheat at crafting by bodysnatching a craftsman.

I was going to build a body and slowly twist it this way and that if it would improve its skill as time went on. Seeing as you cannot have a corpse improve, finding a already good one is the next logical step!

Sorry, we'll prevent things like that from working one way or another. If you want crafting done, learn it yourself or find another PC who can do it for you.
