Do different armor types (ie. body, head, neck, ect) give different amount of gains? Or is it once you armor smithing skill is a certain point, it's time to move onto something else to smith?

They should all offer the same amount of gains. The amount of materials used doesn't increase the amount of experience you gain per attempt.
