Warhorses have higher combat skills and are war-trained, meaning you can use them to trample and charge.

How does being mounted effect Casting or Firing? Is it the same between the two horses?

War-trained mounts provide a static bonus to all attack types. Melee enjoys additional benefits, depending on weapon types (polearms and chained weapons are particularly useful via mounted combat). Some melee types actually suffer accuracy penalties when used in mounted combat, including brawling, daggers, and staffs.

Where do scythes fit into that?

Scythes = hafted weapons. They work fairly well when mounted.
