There's a small chance to spawn rare grumpy citizen types, like your friend the Dwaedn warrior, that are meant to be much more dangerous. This is partially to discourage people from using NPC crowdstealing as a way to produce their own personal hunting ground.

I've been killed by these guys 3 times in a single training period before. Is there a better means of gaining steady money from steal that doesn't have such a high frequency of becoming Dwaedyn puree?

You can steal from the citizens of Tarueka, the robbers of the robbers' camp, and various other human NPCs out in hunting areas that aren't anywhere near as dangerous as your Dwaedn friends.
